Lemon Loaf

1 C. sugar
2 eggs
½ C. butter
1 ½ C. flour
¼ tsp. salt

1 tsp. baking powder
½ C. milk
4 Tablespoons grated lemon rind
¼ C. lemon juice
1 tsp. lemon extract
1 C. chopped walnuts

- Blend sugar, eggs and butter beating until light.
- Sift together flour, salt, and baking powder.
- Add to sugar mixture alternately with milk.
- Stir in lemon rind, juice, extract and nuts.
- Grease an 8X5 inch loaf pan. Pour in batter.
- Bake at 350 degrees F. for 50 minutes.
